Ingredients
Yield:6 to 8 servings
- ¾of a small head of cabbage, sliced as thinly as possible
- 5ounces olive oil (extra virgin preferred)
- 4ounces red wine vinegar
- Juice of 1 lemon
- Salt and freshly ground pepper to taste
- ½cup chopped fresh parsley
Preparation
- Step 1
Place the sliced cabbage in a large mixing bowl.
- Step 2
Combine the remaining ingredients, and blend thoroughly. Season to taste. Pour over cabbage, and toss well.
