Ingredients

Yield:about 10 cups
  • ¼pound butter
  • 1medium-size onion, minced
  • 1cup minced Italian parsley
  • 1cup minced celery, including leaves
  • 1tablespoon salt, or to taste
  • teaspoons pepper
  • 2teaspoons dried thyme
  • 1teaspoon dried rosemary
  • 1teaspoon sage
  • 8cups stale bread, cut into ½-inch cubes, toasted lightly
  • ½cup chicken broth, plus another ½ cup if stuffing is not cooked in turkey

Preparation

  1. Step 1

    In a skillet over medium heat, melt the butter. Add the onion, and saute until soft, about 5 minutes. Add the parsley, celery, salt, pepper, thyme, rosemary and sage, and cook for 5 minutes. Place the mixture in a large mixing bowl, add the cubed bread and chicken broth, and toss to combine.

  2. Step 2

    When cool, stuff the turkey and bake. If you prefer, preheat the oven to 350 degrees, add ½ cup chicken broth to the stuffing and bake in a casserole for 40 minutes.

Decrease sage when using dried rubbed sage to 1/4-1/2 tsp based on your preference.

Variation No 2 fancy mushroom 1/2 lb chanterlles and 1/2 lb shitake. minced add to minced oninioncook for 15 minutes. not necessar to add more broth if in casserole.

Casserole dish should be covered or uncovered??
