Pressed Cheese Straws

Ingredients
- 8tablespoons (1 stick) butter, softened
- 8ounces deep-yellow, extra-sharp cheddar cheese, grated or finely shredded
- ½teaspoon salt
- ½teaspoon cayenne pepper (add a pinch more if you like them a bit hotter)
- 1½cups plus 1 tablespoon sifted flour
Preparation
- Step 1
Preheat the oven to 350 degrees. Mix the butter with the cheese and the seasonings in a large bowl. Add the flour and knead into a smooth dough.
- Step 2
Pack the dough in batches into a cookie press and press through the flat, ridged-line opening onto an ungreased cookie sheet to form ''straws'' of about 2½ to 3 inches in length.
- Step 3
Bake until golden (do not let them brown) and crisp, 15 to 20 minutes. Remove from the pan with a metal spatula and let cool. Serve or store in an airtight container. (The straws are very fragile.)

These are attractive and tasty but I struggled with the recipe. First, the dough would not come together. This may have been because I used a very dry cheddar, but the dough had the consistency of sand. After adding 2T of water I was able to knead into a smooth mass but it was so stiff that I almost broke my cookie press. Baking at the suggested time yielded cookies that were not crunchy. I added several minutes and they browned but never got crunchy.
I love cheese straws and this recipe turned out perfectly. I will make them again and again. My husband loved them too.
I don't have a cookie press, so I pushed the dough through a frosting tip (the widest, star-shaped one). It took a little while, but they came out perfect!
