Preparation

  1. Step 1

    Score the fish twice on each side vertically. Combine the black beans, garlic, scallions, ginger, peanut oil, salt and pepper. Spread the mixture over the fish and inside the cavity. Let the fish marinate for at least 30 minutes.

  2. Step 2

    Preheat grill or broiler. Broil the fish for six to seven minutes on each side, or until done. To serve, sprinkle with coriander and garnish with lemon.

I used white miso because it’s what I had. This was so delicious and easy. I made a 2.4 pound snapper on the grill for about 25 minutes. Perfect!

I really wanted to grill a whole fish, and I took a chance with 2# red snapper from my grocer in Utah. It’s not the coast. Thus, it was with trepidation that I followed this recipe. It turned out beautifully! Paired with grilled romaine salad and sautéed broccoli with mushrooms.
