Lemon-Ginger Tea

Ingredients
- 1quart water
- 1lemon, halved
- ¼cup freshly grated ginger
- ¼cup honey
- Thinly sliced lemon and lime, for garnish
Preparation
- Step 1
Bring the water to a boil in a saucepan. Juice the lemon and add the juice, the squeezed lemon rind and the ginger to the water. Remove from the heat, cover and let steep for 20 minutes. Whisk in the honey. Line a strainer with a thin, wet cloth and strain the tea into a pitcher. Refrigerate until cold. Serve over ice, garnished with lemon and lime slices.

This is good as written but would be more aptly named “Very Ginger & a bit of Lemon Tea”. The resulting drink is very spicy but doesn’t taste of lemon, which might be okay if you’re sick, but wasn’t what I was hoping for. I halved the ginger and doubled the lemon, serving it over ice for a very refreshing beverage. We drink it when we tire of water in the hot summer months.
This is wonderful for a cold. I drink it hot and it helps with sore throats
