  • 2½cups all-purpose flour
  • 1ÂĽcups sugar
  • 1teaspoon baking soda
  • 3large eggs
  • ½cup warm honey
  • ½teaspoon cinnamon
  • ÂĽteaspoon ground cloves
  • ÂĽteaspoon ground ginger
  • ½teaspoon salt
  • ÂĽcup blanched almonds or walnuts

Preparation

  1. Step 1

    In the large bowl of an electric mixer, using the paddle attachment, mix the flour, sugar, baking soda, cinnamon, ground cloves, ginger and salt. Add 2 of the eggs and the honey, and mix until the dough comes together. Wrap the dough in plastic, and refrigerate for two hours.

  2. Step 2

    Preheat the oven to 350 degrees.

  3. Step 3

    On a pastry board sprinkled with flour, roll out the dough to the thickness of a pencil (about ÂĽ inch), and cut with a cookie cutter into 1-inch rounds. Place the dough on a greased baking sheet, leaving about 2 inches between the rounds.

  4. Step 4

    Beat the remaining egg, and using a brush, coat the cookies. Top with half a blanched almond or walnut.

  5. Step 5

    Bake on a rack in the middle of the oven for 8 to 10 minutes.

There is no grease in here, except for the nuts. Slightly dry result.

The dough is very loose and sticky and cooks down into a chewy cookie so be careful about adding too much flour as it will get tough and I added extra amounts of the spices as it didn't have enough of those flavors for my taste. Surprisingly didn't need any added fats besides the egg. Next time I will try to toast the nuts first for added flavor.
