Cooked Meat and Tomato Sauce Italian Style

Ingredients
Yield:About 4 cups
- 4cups imported canned tomatoes
- ¼cup olive oil
- 1teaspoon finely minced garlic
- ½cup finely chopped onion
- 1cup chopped cooked pork or stewed beef
- Salt to taste, if desired
- Freshly ground pepper to taste
- ¼cup tomato paste
- ¼cup finely chopped parsley
- 2tablespoons finely chopped fresh basil or half the amount dried
- ½teaspoon dried hot red pepper flakes
Preparation
- Step 1
Put the tomatoes in a saucepan and cook 30 minutes or longer until reduced to three cups.
- Step 2
Heat the oil in a casserole and add the garlic and onion. Cook, stirring, until wilted. Add the meat and cook, stirring, about one minute.
- Step 3
Add the tomatoes, salt, pepper and tomato paste. Stir to blend. Add the parsley, basil and pepper flakes. Cook, stirring, 10 minutes.
