Ingredients

Yield:Makes roughly 4 cups.
  • 2cups sugar (evaporated organic cane sugar from Trader Joe’s works well)
  • 4cups water
  • 12-15 cinnamon sticks, broken up
  • 10star anise pods
  • ¼ounce whole allspice (a large handful)
  • ounce whole cloves
  • 1vanilla pod, sliced down the center and opened out
  • 1large ginger root, 4 to 6 ounces, grated.

Preparation

  1. Step 1

    Place all ingredients except sugar and ginger in a large saucepan and bring to a boil. Turn down the heat and simmer, covered, for two hours. Remove from heat and stir in sugar until well dissolved. Cool to room temperature, then grate the ginger and stir in. Cover and set aside for at least 12 hours. Strain through a fine-mesh sieve into a sealable jar and refrigerate.

This is amazing with bourbon!! And it makes your house smell like a Norman Rockwell painting

How long will this recipe keep once refrigerated? 2 weeks?

I would try it in a drink to see how much you’ll need, then if you don’t know how quickly you’ll use it up, freeze in ice cube tray and defrost as needed. I do that with all my non syrups that I use for drinks. Hope this suggestion is helpful.
