  • ¾ounce Aperol
  • ¾ounce St-Germain
  • ¾ounce lime juice
  • ¾ounce rosemary-infused simple syrup (see note)
  • 2ounces dry sparkling wine
  • Rosemary sprig for garnish

Preparation

  1. Step 1

    Shake the Aperol, St-Germain, lime juice and rosemary-infused simple syrup with ice and strain into a champagne flute. Top with sparkling wine. Garnish with a large sprig of rosemary.

Tip
  • To make the syrup, combine ½ cup sugar and ½ cup water in a small saucepan and cook over medium heat, stirring occasionally, until sugar dissolves. Add 6 rosemary sprigs, turn heat to low and cook for 30 minutes. Let cool, strain out rosemary, then transfer to a very clean jar or bottle. Cover and keep refrigerated until ready to use.

As Ambrose noted, do not cook the rosemary for as long as it says. Better to make the simple syrup, add rosemary and let boil for about 60 sec then remove from heat and let steep for 30 min.

A delicious combination of flavors. Be careful when making the rosemary simple syrup; if the syrup is too hot during infusion, it’ll develop a lawn taste. I reduced the simple syrup by 0.5tbsp in the cocktail as I found it too sweet.

Love it! I backed off a bit on the amount of rosemary simple syrup, and it was delicious. Citrusy, aromatic, bubbly.

Loved this. We didn't have time to make the rosemary syrup so we muddled rosemary in simple syrup and let it sit for a couple of hours before double straining and mixing up the drink. It turned out delicious.

Delicious! Definitely on the sweet side. The rosemary in the syrup was really lovely, and key to balancing the elderflower. Following other commenter's suggestions, I reduced syrup to .5 oz, and I topped off with a little extra sparkling wine to taste. (next time, I'll try keeping the syrup ratio as written, and just top off with extra sparkling). I made this for a party, so I batched everything except the sparkling wine. Shake 3-3.5 oz of the batch with ice, pour into a glass, top with bubbles!
