Preparation

  1. Step 1

    Place oranges cut-side up on a plate and sprinkle rosemary on top, pressing it into oranges so it adheres. Sprinkle with ¼ cup sugar.

  2. Step 2

    On a grill or stovetop, put a 12-inch cast iron skillet over medium heat until a drop of water sizzles on surface. Spread remaining ¼ cup sugar in skillet and when it starts to caramelize place oranges, cut-side down, on sugar. Let cook for 3 to 4 minutes, not moving oranges, so cut side burns nicely and oranges soften.

  3. Step 3

    To serve, place 2 orange halves in bowl with ¼ cup Greek yogurt, and drizzle with burnt sugar juices from skillet.

This recipe needs a binder to make the sugar adhere. I peeled the oranges as recipe called for but then dipped the cut face into flax meal. Then followed the recipe. It came out perfect and the sugar caramelized beautiful when put face down in the burnt sugar in the pan.......

I used Ricotta in place of yogurt - a teaspoon full on top. I found the burnt sugar juices solidified when put on top.

If the sugar hardens, add a little water to dissolve it.

This was a perfect finish to a dinner. Was easy to prepare: had a bowl of rosemary and a bowl of raw sugar. Dipped the oranges in each and put them under the broiler. A dollop of yogurt on top, and immediately to the table…. Will make again.

What does this do to your pan?
