Ingredients
- ¼cup no-salt-added chicken broth
- 1tablespoon canola oil
- 3tablespoons freshly squeezed orange juice
- 2tablespoons freshly squeezed lemon juice
- 2teaspoons honey
- 1teaspoon Dijon mustard
- 1teaspoon poppy seeds
- ¼teaspoon ground coriander
Preparation
- Step 1
Combine ingredients in a small bowl, and whisk. Serve over mixture of greens and fresh tropical fruits.

This is a really nice dressing with a sweetness and fruitiness that's pleasantly offset slightly by the bite of the Dijon mustard. We made it for a salad of Boston bibb lettuce, fresh pear, raspberries, walnuts and minced shallot. I think mango or peach would work very well, too, as would pecans. It's a promising dressing, and I plan to experiment.
