Baked Mackerel In Mustard-Scallion Sauce

Ingredients
- 2½ to 2¾pound whole mackerel, cleaned, gutted but left whole
- ½lemon
- ½teaspoon freshly ground black pepper
- ½cup creme fraiche
- 2tablespoons prepared whole-grain mustard
- 2teaspoons lemon juice
- 4scallions, finely chopped, including the green tops
- Salt, if desired
Preparation
- Step 1
Score the mackerel on both sides, making two or three large X's one-half-inch deep with a small sharp knife. Squeeze the half lemon over the fish.
- Step 2
Combine and stir the remaining ingredients. Coat the mackerel with this mixture and allow to marinate one-half hour. Turn once during the marinating so the cuts in the fish are well coated with the sauce.
- Step 3
Preheat oven to 375 degrees.
- Step 4
Place mackerel in a small buttered oval baking dish and bake until the fish is opaque. Serve at once.
- Fillets can be used instead of whole fish and the fish can be grilled instead of baked. Adjust cooking time accordingly.

Really delicious. I'm a big scallion fan and used a whole bunch of scallions.....I heated up the leftover marinade and served it as a sauce over the fish. Delicious.
I'm not sure if it's because I don't really care for mackerel or the recipe itself, but I don't think I will make this again. I love all kinds of fish but I did not really enjoy this. I also wish there was a suggested cooking time. I took it out prematurely, had to put it back in the oven. I think the total was 20 minutes cooking time before it was done. Also- a "small baking dish" for a 2.5 lb whole mackerel??
