Beets in Orange Butter

Ingredients
Yield:4 servings
- 6small cooked beets
- 3tablespoons unsalted butter
- ¼cup fresh orange juice
- 1tablespoon grated orange peel
- Coarse salt and freshly ground pepper to taste
- 2tablespoons fresh tarragon or parsley leaves, chopped
Preparation
- Step 1
While the beets are cooking, prepare the butter. Melt the butter, add the orange juice, peel, salt and pepper and tarragon or parsley. Mix thoroughly.
- Step 2
Slice the cooked beets or chop them in the food processor. Pour on the butter sauce and serve.
