Horseradish Vodka

Ingredients
- 2ounces fresh horseradish root
- 1750-milliliter bottle of vodka
- 1tablespoon celery seed
- 2tablespoons black peppercorns
Preparation
- Step 1
Peel horseradish, and cut into fine shreds with a vegetable peeler. Uncap vodka, pour off 1 cup and reserve. Using a funnel, add celery seeds and peppercorns to bottle. Add horseradish, then top off bottle with reserved vodka. Let stand at room temperature for 24 hours.
- Step 2
Strain vodka through fine sieve to remove celery seeds and fine particles. Chill completely before serving.

24 hours is not enough time! 6 to 7 days is when the magic really happens!
I found that after a week or so the vodka got a bitter edge. Removed the horseradish at that point. Delicious easy and sure fire crowd pleaser!
Why add celery seeds? Horseradish overpowers any subtle additions. In Russia the recipe is sometimes augmented with lemon and/or honey. The acidity of the lemon and the sweetness of the honey both withstand the horseradish. The right combo depends on your taste buds. Don't grate the horseradish too fine unless you're in a hurry. Larger pieces will take longer to infuse the vodka, but will also be more forgiving of long infusions.
