Salt-Roasted Rack of Lamb

Ingredients
Yield:Four servings
- 3cups kosher salt
- 1rack of lamb
- Freshly ground pepper to taste
Preparation
- Step 1
Preheat the oven to 400 degrees. Spread the salt over the bottom of a medium-size roasting pan. Rub some of the salt over both sides of the rack of lamb. Season both sides with pepper.
- Step 2
Roast until the lamb is cooked medium-rare, about 35 minutes. Let stand 10 minutes before carving.

Made this last night. Just put salt on the bottom of a small baking dish as well as salt and pepper directly on the meat. Nowhere near as much salt as suggested. Great dish.
