  • 1½cups cake flour
  • ½cup plus 1½-2 teaspoons sugar
  • 2teaspoons baking powder
  • 2egg whites
  • 2tablespoons skim milk
  • ½cup applesauce
  • Grated rind of 1 lemon
  • 2cups diced strawberries
  • 1tablespoon dark-brown sugar
  • ½teaspoon ground cinnamon

Preparation

  1. Step 1

    Preheat oven to 400 degrees.

  2. Step 2

    Spray a 9-by-9-inch-square pan with nonstick cooking spray.

  3. Step 3

    Combine flour, ½ cup sugar and baking powder.

  4. Step 4

    In large bowl whisk egg whites and milk. Stir in applesauce and lemon rind. Add flour mixture and stir to moisten dry ingredients. Do not overmix.

  5. Step 5

    Spoon batter into pan and top with strawberries.

  6. Step 6

    Mix remaining 1½-2 teaspoons granulated sugar with brown sugar and cinnamon and sprinkle over strawberries. Bake about 30 minutes. Remove from oven and place on wire rack to cool. Serve warm or at room temperature.
