Preparation

  1. Step 1

    Sift together flour, sugar, soda, baking powder and salt.

  2. Step 2

    Cut in shortening until mixture resembles cornmeal.

  3. Step 3

    Add rolled oats and mix well.

  4. Step 4

    Store in tightly covered container at room temperature.

  5. Step 5

    To make the cookies, place 2 cups mix in bowl, and add 1 egg,1 tablespoon milk and 1 teaspoon vanilla. Mix well. Drop from teaspoon onto greased baking sheets. Bake at 375 degrees for 12 to 15 minutes, until golden. Remove from sheet and store. Keeps eight months.

There appear to be several disconnects between the formula and the directions. i.e. milk eggs and vanilla are not listed in the ingredients list but are mentioned in the directions. A one teaspoon drop cookie cooked for 12 -15 min. at 375°. Is this a correct post? v/r

This is a great cookie base to have on hand. You can stir in anything you like or have (chocolate chips, dried fruit, nuts, etc) in any amount that makes you happy. I added an extra tablespoon of milk as I found the dough a bit dry. I also chilled the dough for about 15 minutes before baking.

This is an understated recipe but has really grown on me. Makes it easy to bake cookies on a weekday, and I am on track to get 4–5 batches of cookies from a single batch of mix. I’ve baked them plain, with cacao nibs, pumpkin spices, and chocolate chips. If using a larger scoop like the 40 size, chilling the batter is highly recommended. Aim for 2 tbsps of spices combined unless they’re freshly ground—I found that 1 tbsp was too little.

Glad I tried a sampling before giving this away as a gift. The cookies are just okay.
