Ingredients
Yield:4 servings
- 46-ounce baking potatoes
- 1teaspoon olive oil
- Salt and freshly ground pepper to taste
- Scallion and Yogurt-Cheese Stuffing, optional (see recipe) OR
- Smoked Salmon and Scallion Stuffing, optional (see recipe) OR
- Hearty Portobello Stuffing, optional (see recipe) OR
- Curried-Spinach Stuffing with Caramelized Onions, optional (see recipe)
Preparation
- Step 1
Preheat the oven to 450 degrees. Prick the potatoes several times with a fork and coat lightly with olive oil. Place directly in the oven and bake until tender, about 1 hour. Split the potatoes lengthwise, fluff with a fork and season with salt and pepper.
- Step 2
Spoon the stuffing into the potatoes and serve immediately.
