Ingredients

Yield:4 to 6 servings
  • 2firm, ripe, unblemished avocados
  • ¾cup finely chopped red onion
  • Juice of 1 lime
  • 1cup peeled, seeded, cubed red ripe tomato
  • 3pickled serrano chilies or any small, green hot tomatoes, finely chopped, about 1 tablespoon
  • Salt to taste if desired
  • Freshly ground pepper to taste

Preparation

  1. Step 1

    Peel avocados. Cut in half and remove and discard pits. Cut avocados lengthwise into thin slices. Finely dice slices. There should be about 3 cups.

  2. Step 2

    Put one cup of cubed avocado, half-cup of onion and half lime juice into container of food processor or electric blender. Blend until finely pureed. Scrape bowl.

  3. Step 3

    To blended mixture add remaining avocado, remaining chopped onion, tomato and chopped chilies. Add more lime juice if desired. Add salt and pepper to taste. Stir to blend.
