Crostini With White Truffles

Ingredients
- 6slices ( ¾-inch thick) crusty French or Italian bread (4 to 5 inches in diameter)
- 1tablespoon unsalted butter
- 2cloves garlic, peeled
- 2cups mixed salad greens (mild varieties like ruby or oakleaf)
- 3tablespoons extra-virgin olive oil
- Freshly ground black pepper
- Salt
- 2tablespoons grated Parmigiano-Reggiano cheese
- 2 or 3firm white truffles (about 5 ounces)
Preparation
- Step 1
Spread the bread slices lightly on one side with the butter and arrange them on a tray, buttered side up. Place in a 400-degree oven and bake about 6 minutes, until crusty but not dry. Rub the buttered side of the toast lightly with the garlic cloves.
- Step 2
Toss the salad greens with 1 tablespoon of the olive oil and a dash each of black pepper and salt, and divide the greens among 6 plates. Arrange the toast on top, one slice for each serving. Sprinkle each of the slices with 1 teaspoon of the cheese and a sprinkling of black pepper and salt.
- Step 3
Using a vegetable peeler or truffle slicer, shave the truffles directly over the toast, coating each piece. Then sprinkle the toast with the remaining olive oil and a dash of black pepper. Serve immediately.

Had some black truffle carpaccio (from Costco) left over from a pasta dish and used it for this recipe. Delicious and so easy!
At $4000 a pound for white truffle, this recipe would cost you $1250 for five ounces. Maybe not the best application?
Welcome to COVID 2020! Just returned from Alba yesterday for the annual International White Truffle, Fiera Internazionale Tartufo Bianco d'Alba. The price for white truffles were 350 euros per Kg. Black ones: mere 80 euros per Kg. There were a number of small black ones under 10 euros. An event hold supervisions of official truffle appraisers.
