  • 2cups Pepperidge Farm stuffing
  • 1onion, chopped
  • 4eggs, beaten
  • ½cup melted butter plus butter for the pan
  • ½cup grated parmesan

Preparation

  1. Step 1

    Preheat the oven to 375 degrees.

  2. Step 2

    Combine all ingredients in a large bowl. Form into bite-size balls and place on a lightly buttered cookie sheet. Bake for 20 minutes and serve.

Tip
  • The spinach balls can be frozen on the cookie sheet. Defrost 20 minutes before baking and then bake as above.

Omit eggs, add lots of finely diced onions, garlic and pepper. The more onions the better. Roll out the Pepperidge farm breadcrumbs to resemble graham cracker crumbs.

Wow that's a lot of butter - they turned out pretty bland, even though I added salt and some nutmeg and tabasco. Also were too dense, 4 eggs is too much in my opinion.

I half the recipe often and just as delicious! Everyone loves and wants recipe!
