Ingredients

  • 2tablespoons olive oil
  • 4cloves garlic, finely minced
  • 1cup finely diced white onion
  • 1cup finely diced celery
  • ½cup finely diced green bell pepper
  • ½cup finely diced red-bell pepper
  • ½cup dry white wine
  • 1cup chicken stock
  • Cayenne pepper
  • salt and freshly ground black pepper to taste
  • 1tablespoon minced fresh thyme or 1 teaspoon dried
  • 1tablespoon minced parley
  • 4cups seeded and chopped tomatoes

Preparation

  1. Step 1

    Heat oil in saute pan.

  2. Step 2

    Add garlic and heat. Then add onion, celery, green and red peppers and saute lightly.

  3. Step 3

    Stir in wine and stock and bring to simmer. Add remaining ingredients and cover. Simmer for 20 minutes. Adjust seasoning. If made ahead, reheat.
