Grilled Halibut With Olive Sauce

Ingredients
- 1tablespoon coarsely ground black pepper
- 2pounds halibut steaks
- ¼cup extra virgin olive oil
- ¾cup oil-cured Mediterranean black olives, pitted and coarsely chopped
- 1tablespoon fresh lemon juice
- 1clove garlic, chopped
Preparation
- Step 1
Preheat a grill or broiler to very hot.
- Step 2
Press the pepper into the surface of the fish. Brush the fish with all but one tablespoon of the oil.
- Step 3
Grill or broil the fish, turning it once, until it is just cooked, 6 to 10 minutes, depending on the thickness of the fish and the heat of the grill or broiler.
- Step 4
Meanwhile, combine the remaining oil with the olives, lemon juice and garlic. As soon as the fish is cooked, transfer it to a platter and spoon the olive mixture on top.

I grilled the halibut filets on the BBQ, 1st side for 5 minutes, flipped for 3 minutes more. Mixed the olive oil, minced garlic and lemon juice in a small dish and poured over the filets immediately after taking them off the grill. Then added sliced pitted olives and minced fresh Italian parsley. A terrific dish! Served with ratatouille and grilled garlic toast.
I grilled the fish over maple-wood coals in our woodstove. Placed the grilled filets on top of some baby greens that I tossed with olive oil and the remaining lemon juice. I only had brine-cured kalamatas and they were kind of meh, so before adding the lemon juice I grated some of the rind over the chopped olives. Served with couscous. A keeper.
Perfect hot summer evening dish. Halibut cooked on the gas grill quickly and was moist and flavorful.

Loved this dish. Used half green olives and half black. Also added some lemon zest.
