Fastest Fresh Tomato Sauce

Ingredients
Yield:4 servings
- 2cups finely diced fresh, red ripe tomatoes
- 1tablespoon olive oil
- 2tablespoons finely chopped onion
- ¼teaspoon finely minced garlic
- Salt to taste if desired
- Freshly ground pepper to taste
- 2tablespoons finely chopped parsley
- 1tablespoon butter
Preparation
- Step 1
Prepare the tomatoes and set aside.
- Step 2
Heat oil in saucepan and add onion and garlic. Cook briefly, stirring, until onion is wilted.
- Step 3
Add tomatoes, salt, pepper and parsley. Cook, stirring often, about 3 minutes. Stir in butter and serve.

Ha-mazing! Puts to rest the odd-ball old myth that to make a good tomato sauce you had to cook it for 6 hours; I had many an Italian cook tell me that after mentioning that I had made my 30-minit sauce. This one sounds delightful and I can just about taste it now! But I know darn well that I will mince up one whole garlic clove and add a spoonful of sundried tomatoes (in oil) to the sauce. :)
