Preparation

  1. Step 1

    Spread mayonnaise on the top of each slice of bread.

  2. Step 2

    Cut off and discard the tough stems from the watercress. Coarsely chop the remaining watercress leaves and stems.

  3. Step 3

    Top 4 of the mayonnaise-smeared slices of bread with the chopped watercress. Sprinkle with salt and pepper and cover with remaining slices.

  4. Step 4

    Cut away the crusts of each sandwich. Cut each sandwich diagonally in half to make triangles.

Instead of mayonnaise, use butter. It’s common in Britain, and I like it much better.

You can usually find watercress at Whole Foods. Read watercress is one of the most densely nutritious foods there is. Sandwich was tasty!

Butter in place of mayonnaise is more common in the United Kingdom. I will never forget having my first watercress sandwiches at the airport when I was 8 on my way to visit my grandmother. Heaven!

Didn’t think I liked watercress until this delightfully easy recipe and its core idea of chopping it up finely. Have topped w poached eggs, have also put on top of everything bagel w cream cheese instead of mayo
