Yield:1 12-inch cake
- 1pound confectioners' sugar
- Juice 1 lemon
- 2egg whites
Preparation

Sift the sugar carefully to remove all lumps. Stir in the lemon juice. In a separate bowl, whip the egg whites until moderately stiff,

Stir the egg whites into the sugar and finish beating with an electric beater. Ice the cake immediately. If you cannot ice the cake immediately, cover the icing with a damp cloth, otherwise it will harden.
