Ingredients
- 1cup shelled pecan pieces
- 1cup plus 1 tablespoon all-purpose flour
- 1cup (packed) light brown sugar
- Pinch of salt
- ½teaspoon cinnamon
- 8tablespoons cold unsalted butter, in small pieces
- 8firm pears, peeled, cored and sliced
- 2tablespoons granulated sugar
- Ice cream or whipped cream
Preparation
- Step 1
Preheat oven to 350 degrees. Butter an eight-inch-square baking dish.
- Step 2
Spread the pecan pieces on a baking sheet and toast in the oven for six to eight minutes. Combine the toasted pecans with a cup of flour, the brown sugar, salt and cinnamon. Rub the pieces of butter in with your fingertips to make a crumbly mixture. Refrigerate.
- Step 3
Toss the pears with a tablespoon of flour and the granulated sugar. Spread in the baking dish and sprinkle evenly with the topping.
- Step 4
Bake one hour until brown, bubbly and crisp. Serve while still warm with ice cream or whipped cream.

I made this, more or less. I tossed the sliced pears with about 2 t lemon juice, then added the flour and sugar. I used 1/2 c flour and 1/2 c old fashioned oats. I reduced the brown sugar as others noted to 1/2 c. I also lightly sprinkled cinnamon sugar over the pears before topping them with the crumble mixture. Superb!
I made this exactly as per the recipe with only one deviation, as it was wintertime, I used frozen pears (I’d been very dubious about the efficacy of frozen pears) from our prolific pair of pear trees. This is hands down the best crisp recipe I have ever made, and I’ve made dozens of them! It came out bubbly and perfect.

I had 4 pears, so I cut the recipe in half. Felt like it would overfill a smaller dish, so I still used an 8x8 dish. Took closer to 50 minutes to bake, and I feared it would be soggy. Nope. Perfectly delicious.
