Ingredients

Yield:6 to 8 servings

    For the Lamb

    • 2teaspoons pink, green and black peppercorns, cracked
    • 1teaspoon salt
    • 1crown roast of lamb

    For the Stuffing

    • 1ounce dried cepes
    • 3cups water
    • 2tablespoons unsalted butter
    • 4shallots, peeled and minced
    • 5cups stemmed and sliced shiitake mushrooms
    • 5cups stemmed and sliced domestic mushrooms
    • ½cup red wine
    • 3tablespoons minced parsley
    • 1teaspoon salt plus more to taste
    • Freshly ground pepper to taste

Preparation

  1. Step 1

    To make the lamb, preheat oven to 425 degrees. Combine the peppercorns and salt, and rub over the outside of the roast, as above. Bake, using recipe for Basic Crown Roast of Lamb (see recipe).

  2. Step 2

    While the roast is cooking, make the stuffing. Combine the cepes and water in a small saucepan. Simmer until mushrooms are soft, about 10 minutes. Drain, reserving liquid. Return the liquid to the pan and simmer until reduced to ¾ cup, about 15 minutes. Set aside. Coarsely chop the cepes and set aside.

  3. Step 3

    Melt the butter in a large, deep skillet over medium heat. Add the shallots and cook until soft, about 2 minutes. Add the cepes, shiitakes and domestic mushrooms. Cook until soft, about 8 minutes. Add cepe broth, wine, parsley, salt and pepper. Cook for 10 minutes.

  4. Step 4

    Remove roast from oven. Turn roast over, place on a platter, and fill the cavity with the stuffing. Place into a serving dish any stuffing that doesn't fit. Serve immediately.
