  • cups flour
  • 1teaspoon baking powder
  • Pinch of salt
  • 3tablespoons packed brown sugar
  • ½cup butter or margarine
  • 1cup shredded Cheddar cheese
  • 1cup raspberry jam
  • ½cup finely chopped walnuts

Preparation

  1. Step 1

    Preheat the oven to 350 degrees.

  2. Step 2

    In a medium-size bowl, combine the flour, baking powder, salt and brown sugar.

  3. Step 3

    Using two knives or a pastry blender, cut in the butter or margarine until the mixture resembles crumbs. Stir in the cheese. Remove ¾ cup of the mixture and set aside.

  4. Step 4

    Press the remaining mixture evenly into the bottom of an 8-inch-square baking pan. Spread the jam evenly over the crust. Sprinkle with the nuts and then the reserved crumb mixture. Press gently.

  5. Step 5

    Bake 25 to 30 minutes or until golden.

  6. Step 6

    Cool completely in the pan. Cut the cooled pastry into 2-by-1-inch bars. Store, well-wrapped, in the refrigerator.

I was looking for an easy recipe with raspberries in it. This seemed a bit strange with the cheese in the crust but fit the bill. It turned out well for the effort. It seems there is an old recipe using velveeta. Oh my!
