Seared Tuna 'Sushi'

Ingredients
- 2tuna steaks, about 2 inches thick and 12 ounces each
- 3tablespoons cracked black pepper
- 1tablespoon coarse salt
- 2tablespoons five-spice powder
- Soy sauce
- 4tablespoons thinly sliced ginger
- 4tablespoons wasabi paste mixed with 4 tablespoons water
Preparation
- Step 1
Wipe steaks dry with paper towels. Mix pepper, salt and five- spice powder together and coat outside of tuna. Leave for about 30 minutes.
- Step 2
Preheat grill or broiler. Sear the tuna over very hot coals for about two minutes on the top and on the bottom. Pass the sides over the coals for a minute. Cool the tuna and serve, passing the soy sauce, ginger and wasabi paste separately.
- Wasabi paste is a Japanese green horseradish available in Asian food markets.

A year later, this is one of our top ten go-to dinners. It is fast and easy and, if the tuna is sushi grade, and it isn’t overcooked, absolutely delicious. Instead of on a grill or under a broiler, I do it on the cook top. Pairings vary: sometimes a cold and refreshing slaw, sometimes corn on the cob, sometimes (like tonight) a wilted Caesar salad.
Might I suggest fresh Japanese cucumber pickles, using rice vinegar, salt, sugar, toasted sesame oil, and chili oil (la-yu)? Super-easy and satisfying. https://www.justonecookbook.com/spicy-japanese-pickled-cucumbers/
I’m not sure the five spice power is the right ingredient as my predecessor commenters are suggesting by adding other ingredients. Would be better on cookies than on tuna. Try adding far less salt and pepper, skipping the five spice powder, and pairing with a cold Thai style peanut noodle and ginger bok choy.

1 tbsp salt flakes. 1 tbsp pepper. 2 tbsp mixed spice. I did it w 1” thick steaks but 1 1/2 to 2” would be better.
