do you use the sichuan peppercorns as they are, or do you have to roast, and then let the shells fall off?

This was great spice. I toasted all the spices in a pan before grinding them until they were fragrant ~ 4-5 minutes.

Can you be more specific on the stick of cinnamon? I have sticks that are 10" long, but I doubt that's how much to use.
