Spicy Star-Fruit Salad With Mint

Ingredients
Yield:8 appetizer or 4 main-course servings
- ¼cup fresh coconut juice or water
- 1teaspoon rice-wine vinegar
- 1teaspoon sugar
- 1red Thai chili, seeded and finely chopped
- 2cloves garlic, peeled and minced
- 1tablespoon lime juice
- 1tablespoon fish sauce
- 2star fruits, thinly sliced
- 1unripe banana, peeled and thinly sliced
- 1cucumber, peeled, seeded and thinly sliced
- ½cup chopped mint leaves
Preparation
- Step 1
In a medium bowl, whisk together the coconut juice, vinegar, sugar, chili, garlic, lime juice and fish sauce. Add the remaining ingredients and toss to coat. Serve with fragrant beef (see recipe).
