Sausage Sauce for Pasta

Ingredients
- ½pound sweet Italian sausages
- 1small onion, chopped
- 2tablespoons butter
- ½cup tomato sauce
- ¼cup leftover walnut sauce from braised endives (see recipe) or ¼ cup beef gravy, or strong brown stock
- ½cup dry white wine
- Pepper and salt to taste
Preparation
- Step 1
Parboil the sausages in water to cover for 5 minutes. Skin immediately and cut into bite-size pieces.
- Step 2
Saute the onion in the butter over medium heat until it is soft and golden. Add the sausage pieces and saute for 3 to 5 minutes longer. Add the remaining liquids and simmer, uncovered, until the sauce is well reduced and slightly thickened.
- Step 3
Add pepper and salt to taste and serve over hot, drained pasta with grated Parmesan cheese. Makes 4 portions.
