Ingredients

  • ½pound sweet Italian sausages
  • 1small onion, chopped
  • 2tablespoons butter
  • ½cup tomato sauce
  • ¼cup leftover walnut sauce from braised endives (see recipe) or ¼ cup beef gravy, or strong brown stock
  • ½cup dry white wine
  • Pepper and salt to taste

Preparation

  1. Step 1

    Parboil the sausages in water to cover for 5 minutes. Skin immediately and cut into bite-size pieces.

  2. Step 2

    Saute the onion in the butter over medium heat until it is soft and golden. Add the sausage pieces and saute for 3 to 5 minutes longer. Add the remaining liquids and simmer, uncovered, until the sauce is well reduced and slightly thickened.

  3. Step 3

    Add pepper and salt to taste and serve over hot, drained pasta with grated Parmesan cheese. Makes 4 portions.
