Boiled Salmon, In Tarragon, Mustard Marinade

Ingredients
Yield:4 servings
- 1salmon fillet, about 1½ pounds
- 2tablespoons Dijon mustard
- 1tablespoon olive oil
- 1tablespoon brown sugar
- 3tablespoons chopped fresh tarragon
- Coarse salt and freshly ground pepper to taste
- 1lime or lemon
Preparation
- Step 1
Wipe the salmon dry with paper towels.
- Step 2
Combine the mustard, olive oil, sugar, tarragon, salt and pepper and mix well. Pour the marinade over the fish fillet and place in a glass or china dish. Cover with foil and refrigerate overnight or for two days.
- Step 3
Preheat broiler. Broil the salmon about three to five minutes on each side, or until it is cooked. Do not overcook or it will be dry. Serve with lemon or lime quarters.
Tip
- This is good with boiled new potatoes and asparagus.
