Ingredients
Yield:2 cups, enough for 120 oysters
- 1¾cups Seville orange juice (about 8 oranges)
- ¼cup Champagne vinegar
- 2large shallots, finely chopped
- ½teaspoon granulated sugar
Preparation
- Step 1
Whisk ingredients together in a small bowl until sugar dissolves. Cover with plastic wrap and chill in refrigerator for half an hour.

Experience with Cuban cooking has taught that since Seville oranges (and juice?) are next to unheard of in most places, one can punt and use a mixture of pressed orange and lime juices -- sometimes lemon stands in for lime.
