Ingredients
- 1½pounds lamb in one-inch chunks
- 1medium onion, peeled and cut into chunks
- 1teaspoon ground cumin
- Salt and pepper
- Lemon wedges for squeezing
Preparation
- Step 1
Start a charcoal or gas grill, or heat a broiler. The fire should not be too hot, and the rack should be about 4 inches from the heat source.
- Step 2
Combine all ingredients except lemon in a food processor, and pulse on and off until meat is ground. Shape into burgers, and grill about 8 minutes total for rare meat, turning once. Squeeze lemon juice over burgers and serve on toasted buns.

I think I'd use a meat grinder next time, rather than the food processor, for better texture. Terrific taste, though!
I easily doubled the amount of cumin for 1 pound of ground lamb. I also added chopped mint to the burgers and served with Greek yogurt.
Great recipe. Since ground lamb is readily available, I just add it to puréed onions and mix all ingredients by hand. I sometimes include thyme and crushed fennel seeds and make sliders. So yummy
Brilliant recipe- so easy! Served with lentil salad with mint and chèvre and grilled zucchini.
