Fine Noodles With Zucchini

Ingredients
Yield:4 servings
- 2small zucchini, about ⅓ pound
- ½pound fine noodles
- Salt to taste
- 2tablespoons olive oil
- Freshly ground pepper to taste
- ½teaspoon chopped garlic
- ¼cup grated pecorino or Parmesan cheese
Preparation
- Step 1
Trim the zucchini but do not peel them. Cut them into ¼-inch cubes. Put the noodles in a saucepan with salted water to cover and cook to the desired degree of doneness.
- Step 2
Heat the oil in a skillet and add the zucchini, salt and pepper. Cook over medium-high heat for about 2 minutes. Add the garlic and cook 30 seconds; do not brown. Set aside.
- Step 3
When the noodles are ready, drain quickly but thoroughly. Spoon the zucchini and cheese over them and toss quickly. Serve immediately.
