Ingredients

Yield:Eight servings
  • 1pound Dungeness crab meat
  • ¼cup scallions, thinly sliced
  • ¼cup mayonnaise
  • Salt to taste
  • Cayenne pepper to taste
  • 1tablespoon lemon juice, or to taste
  • 8slices good-quality white bread, crusts removed, each cut in ½ on the diagonal
  • 8sprigs of chervil, for garnish

Preparation

  1. Step 1

    In a mixing bowl combine the crab, scallions and mayonnaise. Season to taste with salt, cayenne and lemon juice.

  2. Step 2

    Toast the bread slices and spread with the crab mixture. Garnish with a small sprig of chervil and serve immediately.

Used this recipe with some fresh caught & boiled crabs. Getting the crab meat out took an hour. By the time that was done, the produce store was closed. Used lemon, cilantro, salt, pepper, and lots of butter on sourdough toast. Delicious. Let the crab shine!
