  • 6ripe plum tomatoes, finely chopped
  • 2cloves garlic, finely chopped
  • 2tablespoons chopped pitted black olives

  • Freshly ground black pepper

Preparation

  1. Step 1

    Bring a large pot of salted water to a boil, add the spaghetti and cook until al dente, about six minutes.

  2. Step 2

    While the spaghetti is cooking, put the tuna and its oil in a bowl and mash it with a fork. Stir in the tomatoes, garlic, olives and basil. Season to taste with salt and pepper.

  3. Step 3

    Drain spaghetti, reserving a couple of tablespoons of cooking water. Transfer spaghetti to a bowl. Fold in tuna mixture, adding the reserved cooking water if needed to thin sauce. Season with pepper and serve warm or at room temperature.

So easy! Had a busy day and nothing in the fridge for dinner, but was able to make this with staples I had in the cupboard. Definitely needs a little salt. I didn't have olives but added a tablespoon of capers which gave it a little zing. Delicious and filling!

Add extra salt to taste depending upon the quality of tuna oil. Definitely use fresh basil. Add a little chopped raw walnut and lemon for texture and acid. Serve with toasted garlic parmesan bread. This recipe is a definite keeper!

Nice pasta with fresh sauce for hot summer days when good tomatoes are abundant. Thanks.
