Preparation

  1. Step 1

    This dough may be made with food processor or by hand. With processor, combine all ingredients in container and blend thoroughly. Shape dough into a ball.

  2. Step 2

    If done by hand, put flour on flat surface and make well in center. Add salt, eggs and half the water. Knead well for 10 minutes or longer. Add more water as necessary to make smooth dough.

  3. Step 3

    Place dough in clean cloth and wrap neatly to enclose. Let stand 30 minutes before using.

This egg noodle recipe is perfect! Simple, quick and not too “eggy”. I used the hand mixing method and it was fun and satisfying to feel it coming together. I only varied from the recipe by wrapping the dough in plastic wrap and then a towel for the rest period. Rolled them out to about 1/16” thick and dropped them into a big kettle of simmering soup and they were done to perfection in just a minute or two. They are infinitely better than store bought and really not much trouble at all.
