Cooked Meat and Tomato Sauce Italian Style

Ingredients
Yield:About 4 cups
- 4cups imported canned tomatoes
- ¼cup olive oil
- 1teaspoon garlic minced fine
- ½cup onion chopped fine
- 1cup chopped cooked pork or stewed beef
- Salt to taste, if desired
- Freshly ground pepper to taste
- ¼cup tomato paste
- ¼cup parsley chopped fine
- 2tablespoons fresh basil chopped fine or half the amount dried
- ½teaspoon dried hot red pepper flakes
Preparation
- Step 1
Cook tomatoes in saucepan 30 minutes or longer until reduced to three cups.
- Step 2
Heat oil in casserole and add garlic and onion. Cook, stirring, until wilted. Add meat and cook, stirring, about one minute.
- Step 3
Add tomatoes, salt, pepper and tomato paste. Stir to blend. Add parsley, basil and pepper flakes. Cook, stirring, 10 minutes.
