Yield:4 servings
  • 1cup all-purpose flour, plus more as needed
  • ½teaspoon salt
  • 2eggs
  • 1teaspoon olive oil
  • 6cups chicken stock, preferably homemade
  • A few gratings of nutmeg (about ⅛ teaspoon)
  • Freshly grated Parmesan cheese

Preparation

  1. Step 1

    Combine flour and salt in food processor, and pulse once or twice. Add eggs and oil, and turn machine on. Process until a ball begins to form, about 30 seconds. Add a few drops of water if dough is dry and grainy; add a little flour if dough sticks to side of bowl. You want a not-too-sticky, quite firm dough; knead by hand with a little flour if necessary to achieve that. (You can wrap dough in plastic and refrigerate for up to a day at this point.)

  2. Step 2

    When you are ready to cook, bring stock to a slow boil in a large pot. Using more flour as needed, flatten or roll dough out quickly to less than ¼ inch, then cut it into strips or shapes with a knife; add to stock. Alternatively, pinch small pieces of dough directly into simmering stock.

  3. Step 3

    Cook until pasta is tender but firm, 3 or 4 minutes. Season broth with nutmeg and serve, passing Parmesan at table.

This is seriously delicious. Made the recipe as written plus I sprinkled some minced parsley on top for contrasting color, and added some freshly ground black pepper for a bit of a kick. Note: It's only as good as the chicken stock you're using, so by all means make your own. (You can always freeze the remainder for future use.) I used the excellent Basic Chicken Stock recipe by the NYT's Florence Fabricant.

Excellent! I had never made pasta before but I was hungry and didn't want to go to the store. I put a chopped up head of broccoli into some veggie stock then the pasta I had just made. Delicious & easy! Yum yum!

This was delicious! Great use of leftover homemade broth and the hand made pasta really takes it up a notch

Love this recipe - it's delicious and makes homemade pasta accessible. When the kids were little, they'd have fun cutting the pasta dough into shapes or easy squares. I love that there's no messy pasta machine to clean!
