  • ½cup freshly grated Parmesan cheese
  • ¼cup flour
  • Salt to taste, if desired
  • Freshly ground pepper to taste
  • 1teaspoon paprika
  • 1egg, lightly beaten
  • 1tablespoon milk
  • ¼cup melted butter
  • ¼cup sliced almonds

Preparation

  1. Step 1

    Preheat the oven to 350 degrees.

  2. Step 2

    Wipe the catfish dry.

  3. Step 3

    Blend together the cheese, flour, salt, pepper and paprika.

  4. Step 4

    Combine the egg and milk in a flat dish.

  5. Step 5

    Dip the fillets in the egg mixture and then coat with the cheese mixture. Arrange the fillets in one layer in a baking dish and pour the butter over all. Sprinkle with the almonds. Place in the oven and bake 20 minutes.

Sprinkle fish with salt and pepper before breading. Broil the baked filets a few minutes before serving to achieve a better crust.

Absolutely love this recipe. I skip butter and drizzle fish fillets with avocado oil instead. Makes for perfect and easy fish sandwiches: toasted sourdough, mayo, avocado, tomato and fish. Fast and tasty dinner!

I made this recipe and used your variation and it was excellent!

So good. Farmraised Catfish is a sweet, meaty freshwater fish. Be sure you buy American raised, like Simmons Farms. So much better than tilapia, which I would never eat.

Smoked paprika was a nice touch too!
