Risotto With Morels

Ingredients
- 4ounces dried morels
- 2cups hot water
- 3½ to 4cups chicken stock
- 2tablespoons unsalted butter
- ½cup finely chopped onion
- 2cloves garlic, minced
- 1½cups arborio rice
- â…“cup dry white wine
- Freshly grated Parmesan cheese
Preparation
- Step 1
Put the morels in a small bowl, add the water and set aside to soak for 30 minutes. Drain the morels, reserving the liquid. Mix the liquid with the stock and place in a saucepan. Keep at a low simmer.
- Step 2
Heat the butter in a heavy saucepan, add the onion and garlic and saute over medium-low heat until tender but not brown, about 10 minutes. Stir in the rice and cook, stirring, a few minutes until the rice begins to whiten. Add the wine and the morels. Stir.
- Step 3
Gradually add the simmering stock, about half a cup at a time, stirring constantly. Add additional stock as each ladleful becomes absorbed into the rice. Continue adding the stock until the rice has swelled and is al dente. Continue to cook, stirring, another minute or so. The rice should be just tender and moistened with a thickened sauce.
- Step 4
Serve dusted with Parmesan cheese.

How can you adjust this recipe if you have fresh morels?
Major yummy! I had a two ounce bag of Morels, and that was plenty. Four ounces would be decadent and overkill! I ended up using all 4 cups of chicken stock plus the soaking water from the mushrooms, so it might be a good idea to have an extra cup of hot stock or water on hand in case it is needed at the end. 18-20 min total cooking time - Average for risotto. I added about a half cup of good quality freshly shredded Parmesan, and salted to taste at the end. Delicious side dish!
5 full cups of dried morels is a HUGE amount. I hunt them annually but would find it hard to part with that many of them. Their flavor permeates a dish easily so I think a quarter that amount would suffice. Break into smallsih pieces to distribute them better.
@BTB Another recipe I found for morel risotto suggested 1/2 pound fresh or 1 ounce dried. So judging by this recipes quantities...that would be 2 pounds. ( I didn't find that many this year.... ) Ethical foraging means I will use the recipe that calls for less.
Everyone says 4 oz dried is WAY too much. Florence Fabricant suggests adding some anchovy paste.
4 oz of dried morels in Canada will cost you about $85 (2022). What an extravagant and wasteful amount of mushrooms for a single dish. Even 2 oz dried is more than enough for this recipe.
