  • 1small head radicchio, cored and sliced thin
  • Salt and freshly ground black pepper
  • 1tablespoon balsamic vinegar
  • 3tablespoons heavy cream
  • 4ounces smoked salmon, sliced ¼-inch thick
  • 8ounces fresh fettuccine
  • 1tablespoon chopped fresh basil

Preparation

  1. Step 1

    Bring a large pot of water to a boil for the pasta.

  2. Step 2

    Heat the oil in a heavy skillet, add the radicchio and cook over medium heat until the radicchio wilts, about 5 minutes. Season it lightly with salt and pepper, stir in the vinegar and the cream and just bring to a simmer. Add the salmon and remove from the heat.

  3. Step 3

    When the water is boiling add a generous pinch of salt, then cook the fettuccine about 2 minutes. Drain it well.

  4. Step 4

    Add the pasta to the skillet, return the skillet to the heat and cook, stirring gently, about 2 minutes, until the ingredients are well blended. Add the basil and serve at once.

Very good. We substituted arugula because that’s what we had. Also added 1 tablespoon of capers.

It works. First bite made me wary but the balance of this combination of flavors soon had me hooked. I used a little more cream. I'll make it again

I wanted to combine pasta with some radicchio I wanted to cook and gravitated to this recipe when I saw "smoked salmon" because I also had some in the fridge. From that point, I didn't have some of the other ingredients. I didn't have the cream. I threw in some almond milk and it didn't do much. I used bucatini instead of fettucine. Instead of basil, I used parsley. It all worked out. I didn't miss the cream or it's calories and the other substitutions were successful.
