Preparation

  1. Step 1

    Place half the berry slices in each of four large stemmed goblets. Sprinkle each portion with a teaspoon of the sugar.

  2. Step 2

    Stir the yogurt to smooth it, then spoon all but one-fourth cup of it over the berries. Top with the remaining berries and a dollop of the remaining yogurt. Sprinkle with the remaining sugar and garnish each serving with a mint leaf.

This is good, but adding a granola layer (if you eat carbs) or walnut or almond layer (if you don't) gives the parfait a nice crunch. I don't use the sugar: fresh berries don't need it. For parties, a little shaved chocolate on top is nice.
