Ingredients
Yield:One-quarter cup
- 4tablespoons unsalted butter, softened
- 2teaspoons grated lime zest
- ½teaspoon salt
- 2teaspoons finely chopped fresh mint, optional
- 1tablespoon fresh lime juice
Preparation
- Step 1
In a small bowl, cream the butter with the lime zest, salt and mint, if using. Gradually stir in the lime juice. Use immediately or refrigerate.

Was very difficult to stir in lime juice so used immersion blender. I think the recipe would be better if blending options were given up front. Very tasty on salmon.
