Yield:8 servings
  • 2pounds sweet potatoes
  • 2cups milk
  • 1cup heavy cream
  • 3cloves garlic, crushed
  • 2tablespoons butter
  • 5tablespoons unseasoned bread crumbs
  • Salt to taste
  • Cayenne pepper to taste
  • ¼cup grated cheddar cheese

Preparation

  1. Step 1

    Peel sweet potatoes and slice into rounds ¼-inch thick. In a saucepan simmer milk, cream and garlic about 10 minutes, until the potatoes are barely tender. Remove from heat.

  2. Step 2

    Preheat oven to 375 degrees. Rub a baking dish with one tablespoon of butter, and dust with three tablespoons of bread crumbs.

  3. Step 3

    Season potatoes and cream with salt and Cayenne pepper. Spread mixture in baking dish, sprinkle with cheese and remaining bread crumbs, and dot with rest of butter. Bake 30 minutes, until lightly browned.

Tip
  • This recipe can be made with white boiling potatoes.
