  • 4tablespoons sherry vinegar
  • cup extra-virgin olive oil
  • Salt and freshly ground black pepper
  • 2sweet red peppers, seeded, cored and slivered
  • 1green pepper, seeded, cored and slivered
  • ½red onion, sliced paper-thin
  • 1tablespoon minced scallions
  • 1teaspoon minced fresh chili pepper
  • 2smoked chicken breasts, skinned and slivered
  • ¼cup fresh coriander leaves, coarsely chopped

Preparation

  1. Step 1

    Beat the mustard and vinegar together in a salad bowl. Beat in the olive oil. Season the dressing to taste.

  2. Step 2

    Add the peppers, onion, scallions and chili pepper and mix.

  3. Step 3

    Add the chicken and toss all the ingredients together. Just before serving, fold in the coriander.
