Squid With Smoked-Ham Stuffing

Ingredients
Yield:4 servings
- 4squid of ½ pound each
- 3 to 4ounces smoked ham
- 2ripe tomatoes, peeled (or one cup canned Italian)
- Coarse salt and freshly ground pepper to taste
- About 4 tablespoons fresh chopped parsley
- 1medium to large onion
- 2 to 3tablespoons olive oil
- 2cloves garlic
Preparation
- Step 1
Clean the squid. Chop the tentacles finely with the ham and tomatoes and add salt, pepper and chopped parsley to make a thick mixture. Stuff the squid with this, but not quite full and fasten each with a toothpick.
- Step 2
Chop the onion and cook it gently in the oil with the whole cloves of garlic. Add the squid and cook them gently over a low heat for 20 minutes, adding a little water (or white wine) toward the end if the sauce seems to be drying up.
- Step 3
Serve on a bed of rice.
